Instant Pot Diaries: Zero to 100 real quick

Look what has returned! The Instant Pot Diaries! And because this is the second edition, I took the singular diary and made it plural. Big day around here, folks. Big day.

If you read last week’s post, you know I tried spaghetti and meatballs for my very first meal. It was an experience. So much so, I used my Instant Pot again and again. I’m a crazy person!

I also promised I would report back on the meatloaf I planned to make, and I did make it. So here I am. BUT guess what! I also made ribs in my Instant Pot! Look out, world!

OK – That’s enough sentences with exclamation points. Let’s get down to business.

Instant Pot Meatloaf and Mashed Potatoes

This was the meal I was most eager to try after the spaghetti and meatballs. I’d seen a lot of talk about making meatloaf and mashed potatoes in the Instant Pot and how easy it was, but I needed proof. I needed to make it myself.

So, how did it turn out? Here are my quick thoughts:

  • The seasoning and BBQ sauce in this recipe are great. Next time I make it I’ll probably go for a spicier BBQ sauce versus sweet, but I liked the use of BBQ sauce in the actual meatloaf (I usually use ketchup).
  • I would recommend 25 minutes on Manual in the Instant Pot, versus 20. I did 20, and it turned out fine but was still a little pink in the center. Nothing a few minutes in the oven couldn’t fix, but I’ll just leave it in the Instant Pot longer next time.
  • Also, don’t skip the broiling part. That really makes the ketchup concoction on top come to life.
  • The mashed potatoes were the best part. I’m never making mashed potatoes on the stove ever again. I literally chopped them up (skin and all), tossed them in the bottom of the pot and forgot about them. When the meatloaf went in the oven, I mashed them up with some butter, milk and sour cream, and voila. Best thing ever.

All in all, I’d give this meal a B+. It’d be higher had I let the meatloaf cook longer in the Instant Pot, but now I know for next time. We’re learning!

Also, do you like how I couldn’t wait to eat the top of my roll until the photo was taken? Whoops.

Talk about the diet plate, right?

Anyway, this was a meal that wasn’t supposed to happen but I was so inspired by the meatloaf that I just went for it. A trip to the store for ribs and I was in business.

Here’s what I will say about cooking ribs in the Instant Pot: Do it. Do it. Do it.

I am in no way suggesting these are better than smoking them for hours, or whatever fancy tricks y’all have, but for a quick meal, these couldn’t have turned out better. The meat literally fell off the bone, and they were so tender. I am impressed.

Once the weather gets nicer, I think you could finish the ribs off on the grill versus in the oven. I plan to try that myself.

In the meantime, give this recipe an A+++.

Well, I promised an Instant Pot update and I stuck by my word (hooray!). I’m trying to find other recipes worth trying, but I did buy more frozen meatballs in the meantime for spaghetti.

I really wasn’t sure what to make of the Instant Pot when I first got it, but I can genuinely say I’m happy with it now. Will it replace all cooking in my kitchen? Of course not, but it’s a fun way to try new recipes and also get dinner on the table fast when I need to.

I’ll keep you posted as I continue on this Instant Pot journey. I’m going to have to try a roast at some point. Maybe some soup? The options are endless!


What I wore this week: January 22-27, 2018

Hello, hello. Welcome to my weekly roundup of what I wore. There are a few reasons I’ve decided to do a weekly roundup, and I’ll share those reasons with you now:

  1. I recently got an Echo Look for my closet and it’s really helpful in documenting what I’ve worn. It’s not quite the same, but it makes me feel a little like I have Cher’s closet computer from Clueless. I’m trying to learn the ins and outs of it, while also taking inventory of what I’m wearing. That means I have the photos to share, for better or worse.
  2. I often get asked what I’m wearing (JK JK, like one person every 6 months will ask, tbh) so I obviously want to share the wealth of clothing information.
  3. I don’t know. I just felt like doing a roundup.

Pretty solid reasons if you ask me.

Anyway, here goes nothing. This blog is all about living and learning and whatever else, so maybe this will prove to be helpful to someone other than me. I have no idea, but let’s do it.

It was freezing on Monday, but I had an appointment so I was forced to leave the house. I bundled up, but remained true to myself in one very dumb way: exposed ankles.

Also, my top is so comfortable and soft. I’m obsessed, and it’s only $16!

Tuesday, January 16

For those that may not know, I am not just a sports reporter. I am also a high school cheerleading coach. Fun, right?

Anyway, our high school’s wrestling team had a dual on Tuesday so I was looking for something that felt like sweats but was a little more put together. Since it was still FREEZING outside, I went with a sweatshirt, jeans and moccasins that are actually slippers but I still wear them outside.

Thursday, January 18

I had another high school sporting event, but this one was girl’s basketball. It was warmer outside, but the concept remained the same. I wanted comfort, so I went with the tried-and-true sweater, jeans and sneakers. Except my sneakers have a little extra poof to them, if you will.

Friday, January 19

I separated this one out because I was really excited with how this look came together. I attended ‘A Night of Symphonic Hip Hop featuring Wyclef Jean’ at the Holland Center in Omaha and I wanted to get a little more dressed up than normal, but nothing too crazy. I think I hit the right balance.

Regardless, the concert was incredible. If you can ever see Wyclef Jean in concert, do it. If you can see him backed by a symphony, DO IT. He was incredible, as were all the musicians on stage. I highly, highly recommend and would easily see him live again if he heads back our way.

And that is officially that! My first roundup is complete, and I hope to keep it alive more than one week. Stay tuned.

In the meantime, I’m going to try and revive my Poshmark so follow me there. I’m planning to list a bunch of things, and maybe you’d like to snag something. It says the closet is empty now, but I’ll be adding things soon!


Masking the scars: My favorite makeup go-tos

As you may or may not know, I was in a serious car accident about two years ago. The car I was in was struck by a drunk driver going nearly three times the legal speed limit. Our car was torn open as a result, and the gas tank exploded right by where I was seated.

Needless to say, I suffered burns to my face and scalp. It’s been a difficult journey (and one that isn’t even yet over) but I’ve learned a few tips and tricks along the way to help mask my scars. While there’s nothing wrong with scars (and they should always be celebrated!), I still want to cover the redness/rough texture if I’m out and about.

With that said, I thought I’d share a few of my favorite makeup products that have helped me over the last two years. While not every item I use will make sense for everyone, I’ve run the gamut of products and thought something I use may help solve a problem someone else has.

Without further adieu, here’s a short list of some of my favorite makeup products with review:

Glossier Boy Brow

My right eyebrow was burnt in the accident, but it has mostly grown back. It’s a bit thinner now though, which has had me looking for ways to fill my eyebrows in without *looking like I filled my eyebrows in.*

And y’all, there were a few days for awhile where my eyebrows looked ROUGH. It was a process.

I’ve tried so many products (WunderBrow is excellent if you’re going swimming, FYI) but Glossier’s Boy Brow (I use the brown shade) has been life changing. I use it daily, whether I’m going out or just hanging at home. It has helped my right eyebrow look so much more normal and I can’t thank Glossier enough for creating this product.

And if I ever need any extra help just filling in my eyebrows, Benefit’s Precisely, My Brow Pencil Ultra Fine Shape & Define is the way to go.

Peter Thomas Roth Instant Mineral SPF 45

I’ll never forget the day I was finally cleared to wear makeup after my accident. I went straight to Sephora without a clue of what to buy. I knew I needed products with SPF (because a scar’s pigmentation can permanently change if exposed to too much sun) but how could I slather sunscreen on top of makeup?

Enter Peter Thomas Roth’s Instant Mineral SPF 45.

The woman at Sephora that worked with me that day showed me this product and I’m obsessed with it. I keep one in my bag in the summer, just in case I’m caught outside for too long and need some extra protection. And I always use it as a setting powder when I’m done with my makeup.

It’s a neutral-color, it’s easy to apply and the SPF 45 is perfect for what I need. This is a product I’ll never be without.

Make Up For Ever Step 1 Skin Equalizer Primer

My scars are red. Well, not red *red* anymore, but definitely a darker shade of pink. Laser treatments and time can help, but it’s something I’ve worked hard to correct.

I’ve found that Make Up For Ever’s Step 1 Skin Equalizer Primer is a good place to start. It’s light and perfect if you’re trying to even out light redness. It’s not going to remove severe redness though, which is why I have two products on hand for this very issue (more below).

I recommend this product if you’re looking to color correct just a little redness. They also have other colors if you have something else bogging you down.

Lancome Teint Idole Ultra Wear Camouflage Color Corrector (in green)

As I mentioned above, I need something that can really reduce redness on some areas os my skin. That’s why I turned to Lancome’s Ultra Wear Camouflage Color Corrector.

Here’s the thing: It’s VERY green. When you put it on and start blending, you’ll look a little like Kermit the Frog (or like you’re going to be sick). It’s OK, though. It blends well (just give it a minute!) and it really does reduce redness.

I typically only wear this product if I know I’m going somewhere, will be photographed, or it’s a night out. For day-wear, I typically stay just with my Make Up For Ever version and use foundation to help cover additional redness.

Now, I have way more products that I use beyond just these four. I wanted to start here though, because these are staples in my makeup routine. Caring for scars has been a learning process, but it’s been fun to get to know other makeup and beauty products along the way.

Prior to my accident, I had hardly tried anything different in the makeup world. I was a powder concealer and bronzer gal, with a little blush, eyeliner, and mascara. I now use a bit more, but I like to still keep it simple. The products above allow me to do that and to still feel like me.

Full transparency


In bringing my blog back to life, I’ve thought long and hard about what I want this space to be. I see it as a combination of things, a “lifestyle blog” if you will. I hope I can share my thoughts on anything and everything, whether that’s makeup tutorials, a story from my life as a sports reporter, or something my dog did that might make you laugh.

However, as I’ve set out to start this journey of really committing to my blog, I realized there are still aspects of my life I’m not quite comfortable sharing or talking about. I’m not sure why, because we’re all human and it’s those imperfections that make us real. And yet, I still struggle to be fully transparent.

Over the last few days, I’ve been reminded of how toxic this can be. A good friend of mine recently shared with me thoughts on the culture of social media, and how it’s become a difficult place to be anymore. There’s this constant need (for many of us) to feel like you’re competing, and that your life needs to be perfect. But that’s not reality.

That’s why the news of Washington State quarterback Tyler Hilinski was so heartbreaking for me personally. I read tweet after tweet from people saying how kind and happy he was. The words “cheerful” and “gregarious” were used. Coach Mike Leach said he was a privilege to know.

I believe every word of what those individuals said. But we never know the battles others are going through. That’s the difficult part. The outwardly cheerful and gregarious people we know day-to-day may be battling demons we’ll never see and understand.

And I thought my friend Zach’s tweet on how nobody is “too athletic, too strong, too cool or too seemingly happy to be depressed” was poetic and poignant. Because it’s true.

We’ll never start to understand and know the battles others are going through unless we’re willing to talk and reach out. Even then, we may never know the full story. All we can do is be kind, love one another, show grace and compassion and be willing to listen.

And for myself personally, I promise to balance reality within the “lifestyle” I present here and on my social accounts. Because while it may be hard for me to discuss certain things, I know it can also be very important. I’ll get there, and hopefully we can all help one another along the way.

You are important. You are loved. The world is better because you’re here. Never forget that.

Beating winter blues with a little green

As I write this, it is currently 3 degrees outside (with a windchill temperature of -12). So fun!

I’m not over winter yet, but I’m getting close. We were teased with a couple of 40-50 degree weather days last week, and it made me a little excited for spring. I’m ready to not have to bundle up to the point I can’t move (think ‘A Christmas Story’) and not have the air hurt my face when I leave the house. It’s also a lot easier to walk your dog and let him out when it’s not subzero temperatures outside.


To beat the winter blues, I’ve found myself adding more and more plants to our home. The greenery just makes me so happy, even when it’s grey and miserable outside.


See? That just helps everything look a little more happy and alive. Or so I think, at least. (Also, I swear my photo is not crooked. I realize now that I took this photo at a weird angle and it made things look… a little sideways. I used a level on the photo! It’s fine!)

ANYWAY, a trip to Mulhall’s on Sunday resulted in a snake plants (above) and quite a few other little greeneries (including an aloe plant because of course I need an aloe plant… you know, for future burns). I just couldn’t resist.

I mean, how could anyone? Look at this place!


I would have left with everything if I could have, but I’m more than happy with what I did snag. And they’ve all made me a little happier indoors, despite the subzero temperatures outside. By the way, subzero temps. are good for one thing and one thing only – Temperature Tuesday at Runza. But I digress.

The Instant Pot Diary: First go-round

Ah, the Instant Pot. I was gifted the magic kitchen appliance for Christmas, which was both exciting and terrifying all at once.

You see, I didn’t want an Instant Pot. In fact, I specifically told my mom when she asked that I did not want one. And yet, I received an Instant Pot.

Something about a pressure cooker unnerved me, but my mom thought it would simplify cooking for me. I vowed to at least give it a try, even though I was convinced I would blow up my house.

I documented the journey on Twitter just in case it really happened.

My first recipe was a simple one. I had joined the ‘Instant Pot Community’ on Facebook, which is currently sitting at more than 1 million people strong. As a note on that, there are a lot of posts that show up in your newsfeed when you’re in a group of over 1 million people. I’ve had better ideas in my lifetime.

Aside from being bombarded with recipes and questions every time I logged on to Facebook, the Instant Pot Community did tell me the best thing to start with: spaghetti and meatballs. I started with this recipe, which promised dinner in 10 minutes.

Well… sure.

Here’s the thing a lot of people don’t tell you (or at least didn’t tell me): Instant Pots have to pressurize (duh, Erin – PRESSURE COOKER) and frozen foods take longer for that process to happen. Well, I had poured an entire 1 pound bag of Hy-Vee frozen meatballs in the pot (the Italian style, to be exact), so I was waiting a long time for that sucker to pressurize.

Once it did pressurize though, the whole thing was pretty slick. It cooked for 10 minutes, I released the pressure and voila – dinner was done! The best part? It was literally one bowl to clean (aside from the dishes we used to eat), which was a major selling point to me aside from anything else.

The only thing I learned is that you have to make sure you cover all spaghetti noodles with sauce or water. I missed a few, and they turned out a little crunchy. The rest were great though, and the meatballs were perfect.

For someone who didn’t even want an Instant Pot, I’m pretty addicted at this point. It’s easy, convenient, and a little fun to use. The next night I even threw a bag of Trader Joe’s chicken fried rice in with a cup of water, threw it on the sauté function for 5 minutes, and it turned out perfect. Sold.

I’m trying meatloaf and mashed potatoes next, so thoughts and prayers. We’ll see how it goes. And I’ll make sure to recap it here, because if I don’t document it – did it even happen?

New year, same blog

Oh, 2018.

We’re 12 days into the new year and I’ve been telling myself for days that I would revisit my blog. After six months of successfully ignoring it, I wanted to get back into the swing of things and really give this blog thing a shot. And yet, here we are 12 days into 2018 and I’m just now getting around to it.

Ah, well.

In 2018, I’d like to do more of the little things to better myself and my health. That includes drinking more water, getting more sleep, moving more (be it at the gym or on walks with my dog), reading more, and focusing on this blog. I’d also like to find more organizations, charities and individuals that I can support in one way or another.

Those goals are why I think this blog is important. While I love writing and talking about sports, sometimes it’s nice to talk about literally anything else. And it’s nice to have a place to hold myself accountable to the goals that I have.

So, here’s to a fresh start. I have no idea where this blog may take me in 2018, but I hope to give it a little more love and attention than I did in 2017.

Life has been crazy lately. Between a half-marathon, changing jobs, traveling, co-hosting radio shows and more, it’s been busy. For that reason, this blog is far overdue but actually fitting because the last month has really given me a chance to try (and I mean really try) the product I’m about to share with you.

Thirteen Point One

On May 1, 2016, I stood at the finish line of the Lincoln Marathon. I was a volunteer, trying desperately to move the crowds of finishers along as they got to the tunnel within Memorial Stadium. I had volunteered a few hours the day before at packet pickup, but I wasn’t as prepared for marathon day as I had hoped. It was cold, my body ached and I had to leave about an hour early as my left side cried for some relief.

What a difference a year makes.

The 2017 Lincoln Half-Marathon was my fifth half-marathon. It should have been my sixth, maybe seventh, but things changed as we know now. It wasn’t always an easy journey to get where I am, but I got here.

That journey is a big reason I cried at the starting line and again when I finished. To think I had stood not far from where I was handed my medal, desperate to just keep standing only one year before, was something I couldn’t get over. All of the emotions that poured out of me, especially at the finish line, were in response to everything that had happened over the previous year and a half. It was joy, sadness, excitement and everything in between.

I’ll never forget Jim, who stopped me at the finish line, right as I grabbed my medal. We know each other thanks to Twitter, and he formally introduced himself. He was volunteering this year, anxious to get back in the race next year. I cried as he hugged me, and it was a genuine moment I’ll never forget.

That’s the thing about this community – my community. It has never failed. It never feels deserved, but I am thankful for it.

To Kyle for battling back from the same journey as I did and crossing that finish line even stronger. To my mom for her constant support and sign-making. To Jenny, Brett, Harper and Hadley for the smiles on Sheridan. To Nancy, Laura, Kyra and Camden for the hugs on 48th (although Camden technically just stared at me like I was crazy). To Libby for the extra cheers when she spotted me on the course. To the little girl who yelled “Girl Power!” as I gave her a high-five on South. To Erin and her boys for the high fives and cheers on the trail. To the pacer who encouraged me forward on 10th street. To Jim for the hugs and taking my photo as I stood at the finish line. To every person that tweeted and messaged me support and encouragement. There are no words to truly thank you.

It wasn’t my fastest race – I ended around 2:45 – but I finished. And considering one year ago I stood in the same spot unable to even finish my volunteer shift, finishing is all that matters.

I still will).

Motivation Monday: Week 6

Oh, hey! We’ve officially hit the halfway mark on the half-marathon training. This week was a light week to rest up before some high mileage and I’ll be honest… I really took advantage of that. In fact, I missed a day of running and sort of shrugged it off. Whoops?

Anyway, here’s how the week shaped up:

  • Monday: Rest
  • Tuesday: 3.31 miles
  • Wednesday: Rest
  • Thursday: 3.12 miles
  • Friday: Rest
  • Saturday: Rest
  • Sunday: 3.15 miles

Look at all that rest! Eh, whatever though. I had one of my best runs on Sunday (which was a 5K race) and kept a 10’38” pace. Can’t complain about that.

I am to the point in training though where I’m starting to worry about my shins (I get bad shin splints) and my knees are sore, but I’m trucking on. If you have any tips/suggestions for either, I’ll take ’em.

Hello Fresh: A Review

You know what’s better than food? Free food. And thanks to my friend Jamie, I was able to try Hello Fresh free for a week. It was delightful.

I’ve never subscribed to a food delivery service so I was intrigued. I’d helped cook a Blue Apron meal once before, but I’ve never actually tried one of the services for myself. I figured I’d give it a go, learn a few new recipes and see what all the fuss was about.

The box arrived on Wednesday, March 15. I immediately liked how everything was separated, so I knew exactly what items went with what meal. It also made storing everything super simple in my fridge. The one note I’d make for the future is to take a quick inventory of everything. I didn’t think to go through each box and I ultimately ended up missing out on an item (more on that later).

So, what did I think about the meals? Without further adieu:

Meatballs on Top of Cavatappi with Broccoli and Pesto Cream Sauce


This had the most calories per serving of the three meals I received (950kcal) but it tasted really fresh. It had pesto, cheese and fresh-squeezed lemon, so the flavors were really nice. I didn’t do an amazing job with the meatballs so they turned out a little less round and more random looking, but still very good. Overall, I’d eat this again.

Grade: B+

Dukkah-Crusted Cod with Cranberry Couscous and Roasted Veggies


This had to be the favorite of the three meals. Despite missing the cranberries (which honestly wasn’t a huge deal), this dish came together really well. The fish was flaky, the vegetables roasted perfectly and the couscous cooked really well. It was also the simplest to make, oddly enough. I’d recreate this again, no question.

Grade: A

Chicken Under a Zucchini Blanket with Mashed Potatoes and Green Beans


So, my mashed potatoes were more chunky than I think intended and I blame myself for that. I should have cooked them longer (but I’m always impatient with boiling potatoes). I also probably piled too much zucchini on the chicken, but that’s not a bad thing I suppose. Overall, this one was good. It wasn’t my favorite, but it would be easy to make again and I liked the idea of a vegetable bake on top of chicken vs. bread crumbs.

Overall, I thought Hello Fresh was great. I loved the way their product is packaged and their customer service is great. When I let them know I was missing an ingredient, they responded within minutes and credited me for a future order. Their response time was seriously impressive.

I don’t think I’d order something like Hello Fresh every single week, but if there’s a week I’m feeling uninspired with my own cooking? I’d definitely let Hello Fresh do the work.

Now I’m hungry.
